Preparation procedure

  • Preparing the batter Preheat the oven to 170 °C. In one bowl, mix the flour with the baking powder and salt. In another bowl, beat the butter, oil, sugar and a pinch of salt until creamy. Gradually add the eggs, vanilla extract, lemon juice and zest. Then add the dry ingredients alternately with the milk, in three additions. Finally gently fold in the blueberries coated in a little flour so they don't sink to the bottom during baking. Pour the batter into a pan lined with baking paper (pan approx. 23–25 cm). Bake for 30–35 minutes, until a skewer inserted comes out clean. Let cool completely.
  • Preparing the cream In a bowl, whisk the cream cheese with the cream, powdered sugar, vanilla extract and a pinch of salt until a thick cream forms. Do not spread the cream on a hot base – let it cool thoroughly.
  • Finishing Spread the cream layer evenly over the cooled base. Decorate with fresh blueberries or lemon zest to taste. Refrigerate for at least 1 hour before serving.
