  • Preparing the dough: Preheat the oven to 170 °C. In a bowl, mix the flour, baking powder and salt. In another bowl, beat the butter, oil, sugar and salt until creamy. Gradually add the eggs, vanilla extract, lemon juice and lemon zest. Then alternately fold in the dry ingredients and the milk in three additions. Finally, gently fold in the blueberries (to prevent them from sinking, coat them in flour).
  • Baking: Pour the batter into a pan lined with baking paper and bake at 170 °C for about 30–35 minutes. Check if the cake is done with a skewer — it should come out clean. Let the baked base cool completely.
  • Preparing the cream: In a bowl, beat the quark, cream, powdered sugar, vanilla extract and a pinch of salt until a thick and smooth cream forms.
  • Finishing: Spread the prepared cream evenly over the cooled base. Decorate with blueberries or lemon zest to taste.
