  • Preparing the cream: In a bowl, whisk the egg yolks, vanilla extract and sugar until pale and frothy. Add half of the hot milk and mix well. Then add the flour and whisk the mixture until smooth. Pour in the remaining milk and continue whisking.
  • Cooking the cream: Transfer the mixture to a saucepan and, over low heat, cook for 5–7 minutes, stirring constantly, until the cream thickens.
  • Preparing the whipping cream: Pour the hot cream into a glass bowl, cover with plastic wrap and let cool in the refrigerator.
  • Puff pastry: Roll out the puff pastry and cut into 12 strips. Wrap each strip around a steel cream horn mold, slightly overlapping the layers of pastry.
  • Baking: Before placing in the oven, brush the pastry with cream or beaten egg. Bake at 200°C (440°F) for 15–20 minutes, until the pastries are golden and crispy.
  • Cooling: After baking, let the horns cool and then carefully remove them from the mold.
