These airy pudding slices with apricots combine crispy puff pastry, rich vanilla pudding and juicy fruit. Thanks to the simple preparation, anyone can make them and the finished dessert will refresh your table at a family celebration or during afternoon coffee.

Preparation procedure

  • Preparing the baking sheet and dough: Preheat the oven to 200 °C. Grease a large baking sheet with butter and line it with baking paper. Divide the puff pastry into two equal halves. Roll out the first sheet to the size of the baking sheet, transfer it onto it and raise the edges about 2 cm high.
  • Layering the fruit: Evenly spread the canned apricots over the bottom sheet (cut-side down or up – according to preference) so that they cover the entire surface.
  • Preparing the pudding: In a small saucepan, bring 900 ml of milk with the sugar to a boil. Mix the remaining 100 ml of milk with the pudding powder, whisk until smooth, and while stirring constantly pour it into the boiling milk. Cook for 2–3 minutes, until the pudding thickens.
  • Applying the pudding and the second pastry sheet: Spread the hot pudding evenly over the apricots. Gently place the second sheet of pastry on the pudding and make several slits in the surface with the tip of a knife so excess steam can escape.
  • Baking: Bake in the preheated oven for 25–30 minutes, until the pastry is nicely golden.
  • Finishing: After removing from the oven, let the slices cool completely on the baking sheet. Then dust them with powdered sugar and cut into 24–30 portions.
