Crispy on the outside, tender inside and full of bold flavor. These potato-cheese patties with garlic and spring onion are the ideal recipe when you want to make a quick, inexpensive yet truly hearty meal.

The combination of grated potatoes, melted cheese, garlic and fresh vegetables works absolutely reliably and the recipe has been technically tested. The patties are suitable as a quick dinner, a warm snack, a side dish to meat or a standalone dish complemented by a yogurt or cream dip. Thanks to properly draining the potatoes they are nicely crispy and don’t fall apart.

Preparation procedure

  • Preparing the vegetables Peel the potatoes and grate them coarsely. Put them into a cloth or towel and thoroughly squeeze out the excess liquid – this step is key for a crispy result. Grate the carrot finely, slice the onion into thin slices, chop the spring onion and press or finely chop the garlic.
  • Mixing the mixture Put the squeezed potatoes, carrot, onion, spring onion, garlic and grated cheese into a large bowl. Salt to taste, add the egg and the flour. Mix everything thoroughly until a cohesive mixture forms.
  • Shaping the patties Spoon out roughly 2 tablespoons of the mixture and shape into smaller flat patties. Place them on a plate or board.
  • Frying Heat a generous layer of oil in a pan over medium heat. Fry the patties 3–4 minutes on each side, until golden and crispy. Do not overcrowd the pan during frying so they cook through properly.
  • Finishing Let the finished patties drain briefly on paper towels and serve immediately.

Tip for a simple dip

  • 150 g sour cream or plain yogurt

  • 1 clove of garlic
