Preparation procedure

  • Lightly pound the chops, score the sides so they don't curl during baking. Season with salt and pepper and let rest briefly.
  • Heat oil in a pan and sear the chops quickly on both sides. The aim is to seal the meat, not to cook it through. Transfer them to a baking dish along with the drippings.
  • Spread ketchup over the chops and sprinkle with crushed caraway. Add slices of bacon, the onion cut into rings, garlic and pieces of kapia pepper. Pour the beer over everything.
  • Place the baking dish in an oven preheated to 180–190 °C. Bake for approximately 60 minutes, basting the meat several times with the juices that form during baking.
  • Towards the end of baking you can uncover the dish so the sauce reduces slightly and acquires a darker color.

Practical tips

  • light beer will give the sauce a gentle bitterness, dark beer will create a sweeter, caramel base

  • choose ketchup with a high tomato content; cheap ketchups will unnecessarily over-sweeten the sauce

  • check boneless chops earlier — they tend to be ready faster
