Preparation procedure

  • Preparation of the base: Whisk the egg whites until stiff, then add the sugar and whisk again. Slowly fold in the ground poppy seeds, coconut, vanilla aroma, baking powder and milk. Mix everything thoroughly until a smooth batter forms.
  • Baking the base: Preheat the oven to 200 °C. Pour the batter onto a baking sheet lined with parchment paper and spread evenly. Bake for 10–15 minutes, until the dough turns golden. After cooling, cut the base into 3 equal parts.
  • Preparation of the cream: In a bowl, beat the egg yolks with the sugar until pale and fluffy. Add the pudding powder, milk and vanilla aroma, and stir until a smooth, lump-free mixture forms. Heat the mixture on the stove and cook over low heat until it thickens. Once the cream is ready, add the butter cut into cubes and stir until a smooth cream forms. Divide the cream into two equal parts.
  • Preparation of the glaze: Melt the dark chocolate in a water bath and add a tablespoon of oil for a glossy glaze.
  • Assembly of the dessert: Place the first part of the base on a serving platter and spread it with half of the cream. Place the second part of the base on top and spread the remaining cream. Finally place the third part of the base and press lightly. Pour the chocolate glaze over the top layer and spread it evenly over the entire surface.
  • Chilling: Place the dessert in the refrigerator for several hours so it can set well and the flavors can meld.
