This poppy seed cake with quark cream and strawberries is the perfect combination of a delicate base, fresh cream and fruit jelly. Moreover, it contains no flour, so it is ideal even for those who avoid flour. The base is made from a mixture of ground poppy seeds and hazelnuts, on top of which a quark and whipped cream filling is layered, complemented by fresh strawberries and a gelatin layer. The cake is suitable for celebrations, summer gatherings and as a refreshing pastry with coffee.

Preparation procedure

  • Preparing the dough Beat the egg whites with a pinch of salt until stiff peaks form. In another bowl, beat the softened butter with the granulated and vanilla sugar until fluffy. Gradually beat in the egg yolks. Add the ground poppy seeds, nuts and oil, mix everything thoroughly. Finally, gently fold in the egg white foam. Spread the batter evenly onto a butter-greased and floured baking tray (20 × 30 cm). Bake in an oven preheated to 170 °C for approximately 20 minutes. Let cool completely.
  • Preparing the cream Whip the cream until firm. Add the powdered sugar, vanilla sugar, lemon juice and grated lemon zest. Finally, gently fold in the quark and mix the cream thoroughly. Spread the cream onto the cooled base and smooth evenly.
  • Strawberry layer and gelatin Wash, dry and halve the strawberries. Arrange them on the cream and press them in lightly. Prepare the gelatin according to the package instructions and, while still liquid, pour it over the strawberries. Put the cake in the refrigerator and let it set for at least 3–4 hours.
