Ingredients

For the dough:

5 egg whites
200 g sugar
5 egg yolks
200 g ground poppy seeds
120 g spelt flour (or regular semi-coarse flour)
2 teaspoons baking soda
lemon zest from one lemon

For the cream:

250 ml milk
40 g vanilla pudding powder or cornstarch
1 tablespoon vanilla sugar
120 g sugar
150 g butter
lemon juice from one lemon

For the lemon glaze:

250 g powdered sugar
2 tablespoons lemon juice
1 teaspoon vegetable oil
2–3 tablespoons hot water

Preparation procedure

Cream preparation: Mix the pudding powder in a little milk, bring the remaining milk to a boil in a pan. Add the sugar and vanilla sugar. As soon as the milk starts to boil, add the mixed pudding powder and, stirring constantly, cook a thick pudding. Cover with plastic wrap and let it cool. Beat the butter until frothy, add the cooled pudding by teaspoons and beat well. Finally add the lemon juice and beat until smooth.
Preparation of the base: Beat the egg white into stiff peaks, gradually add the sugar and add the yolks one by one. Beat well until frothy. Gently fold in the ground poppy seeds, spelt flour with the baking soda and sift it into the mixture. Mix and finally add the lemon zest. Bake the batter on a baking sheet lined with parchment paper at 180°C for about 10 minutes. After baking, let the cake layer cool and then cut it in half. Remove the baking paper from one half.
Finishing the cake: Spread the cream evenly on one half of the layer and cover with the second half, with the baking paper on top. After covering, remove the paper. Place the cake in the refrigerator to set.
