This cream is a great choice when you need a firm cream that holds its shape but remains delicate and suitable for a wide variety of flavors. In the basic version it consists of milk, butter, sugar, egg yolks and starch (or pudding). Thanks to this combination it is excellent as a filling for slices, cakes, cream puffs and other desserts where you appreciate firmness and at the same time smoothness.

  • Bring part of the milk to a boil together with the sugar and vanilla sugar
  • In the other portion, whisk the yolks and the starch or pudding powder
  • As soon as the milk begins to boil, pour in the second mixture and make pudding
  • Remove the pudding from the heat and let it cool to lukewarm
  • Start whipping and beat in the rum and butter
  • That completes the cream. Now you can add cocoa, chocolate, sweetened condensed milk (salko), cream, quark and similar.
