- Cut the tomatoes into pieces and blend them in a blender.
- Pour the oil and vinegar into a pot, put it on the stove and bring to a boil. Add the tomato purée from the blended tomatoes.
- Stir, let it reduce, and cook for 35–40 minutes or longer, depending on how thick you want the sauce.
- Meanwhile, chop both the red and green peppers.
- Press the garlic and mix it with the chopped parsley.
- Mix the peppers with the tomatoes and with the garlic and parsley. Salt, taste, and cook for another 15 minutes.
- Sterilize the jars and lids (the easiest way is to do this in the microwave)
- Divide the sauce into the jars, wipe the rims with a clean cloth, and seal with the lids.
- Turn the jars upside down, let them cool, and store them in a cool, dark place.
