Pavlova is one of the most popular summer desserts thanks to its light texture, crispy surface and creamy filling. The original combination of egg whites, sugar and crunchy meringue pairs perfectly with fruit and whipped cream. The following recipe will guide you through the preparation step by step.

Preparation procedure

  • Oven preparation Preheat the oven to 100–120 °C (fan 80–100 °C). Line a baking sheet with parchment paper.
  • Whipping the egg whites Put the egg whites with a pinch of salt into a clean, grease-free bowl and whisk with a whisk or mixer until they start to firm up.
  • Adding sugar Gradually – spoon by spoon – add the sugar and continue whipping until a thick, glossy and stiff meringue forms (approx. 5–7 minutes).
  • Stabilizing the meringue Gently fold in the white wine vinegar (or lemon juice), cornstarch and optionally the vanilla extract.
  • Shaping the meringues Using a piping bag or spoon, shape 6–8 nests or flat circles (diameter approx. 10 cm) on the baking sheet with a slight edge to hold the cream later.
  • Drying in the oven Place in the preheated oven and dry for 1.5–2 hours. The meringues should be crisp on the outside and slightly soft inside. After baking, turn off the oven and let the meringues cool completely with the door slightly ajar.
  • Preparing the cream Whip the cream with the powdered sugar to stiff peaks. In another bowl, briefly stir the mascarpone, then combine it with the whipped cream.
  • Final assembly Spread a layer of mascarpone cream on each meringue „nest“ and arrange fresh fruit in the center. Serve immediately.
