Preparation procedure
- Preparation of the dough: Mix the ground sponge biscuits, sugar, cocoa and rum. Add the cold coffee little by little until a moldable dough forms (about 100 ml).
- Preparation of the filling: Whip the butter, egg yolk and sugar until light and fluffy.
- Shaping the roll: Spread the plastic wrap on the work surface. On the wrap, spread the dough into a rectangle, cover with another sheet of wrap and roll out into a layer about 0.5 cm thick. Spread with the filling and, using the bottom sheet of wrap, roll up into a roll.
- Wrapping and chilling: Coat the roll in grated coconut. Wrap tightly in aluminum foil and place in the refrigerator (preferably overnight).
- Serving: The next day, slice and serve.
