  • In a bowl, mix the sour cream, quark, powdered and vanilla sugar until a smooth cream forms.
  • Whip the whipping cream until stiff and gently fold it into the cream mixture.
  • Prepare the gelatin or stabilizer according to the instructions on the package and stir it into the cream together with the chopped pineapple.
  • Arrange a layer of sponge biscuits on the bottom of a pan (approx. 24 × 24 cm) and lightly drizzle them with pineapple juice. Spread half of the cream, add a second layer of biscuits and the remaining cream.
  • Smooth the surface with a spatula and chill for at least 4 hours, ideally overnight.
  • Before serving, decorate with coconut flakes, mint, fresh fruit or chocolate to taste.
