Preparation procedure
- Preparation of the dough: Crush the cocoa cookies in a blender into fine crumbs. Add the chocolate powder and gradually add the melted butter and peach juice. Mix until a compact dough forms. Press the dough into the bottom of a prepared pan (ideally 26 cm in diameter) lined with baking paper. Place in the refrigerator to set.
- Preparation of the cream: Melt the Nutella in a water bath and let it cool. Whip the mascarpone with the powdered sugar until smooth and divide into two parts. Whip the whipping cream. Mix half of the whipped cream with half of the mascarpone cream and mix the other half of the whipped cream with the melted Nutella. Then fold the second half of the mascarpone cream into the Nutella-whipped cream mixture.
- Preparation of the top layer: Heat the whipping cream (do not let it boil) and remove from the heat. Add the chocolate broken into pieces and stir until it melts.
- Assembling the dessert: Take the tray with the base out of the refrigerator. Layer first the white cream, then the Nutella cream and finally the cream-and-chocolate topping. Let it chill in the refrigerator until properly set.
