Preparation procedure

  • Coarsely crush the biscuits – they shouldn't be completely powdered. Spread them into a baking tray approximately 20 × 30 cm lined with parchment paper and smooth them lightly.
  • Sprinkle the gelatin into cold milk and let it swell for about 5 minutes. Then gently heat it in a bain‑marie or briefly in the microwave until it is completely dissolved. Do not let it boil.
  • In a bowl, whip the cream cheese with powdered sugar into a smooth cream. Add the vanilla extract and, if desired, the rum.
  • Whip the cream to soft peaks – it should hold its shape but remain creamy.
  • Stir the dissolved gelatin into the cheese mixture and then gently fold in the whipped cream. Mix lightly so the cream remains airy.
  • Pour the finished cream onto the biscuit base, smooth the surface and refrigerate for at least 4 hours, ideally overnight, so the cake sets completely.
