This Napoleon is ideal when you want a luxurious dessert without unnecessary baking and complicated procedures. The result looks festive, but really anyone can make it.

If you love puff pastry desserts, this Napoleon with a delicate egg custard will win you over at the first bite. It’s crispy, creamy and surprisingly simple. Preparation procedure

  • Preheat the oven to 200 °C. Roll out the puff pastry to a sheet about 3 mm thick and cut into equal rectangles or squares. Prick each piece with a fork so it stays flat and crispy during baking.
  • Arrange the pastry sheets on a baking tray lined with parchment paper and bake 10–12 minutes, until golden. After baking, let them cool completely so they retain their crispness.
  • Pour the milk into a pot, add the vanilla and slowly heat until almost boiling. Then remove from the heat.
  • In a bowl whisk the egg yolks with the sugar and starch into a pale smooth mixture. While stirring constantly, gradually pour in the hot milk, then return everything to the pot and cook over low heat for about 5 minutes, until the cream thickens.
  • Stir the butter into the hot cream and mix thoroughly to create a smooth and glossy egg custard. Let it cool briefly.
  • Spread a thick layer of cream onto a puff pastry sheet, top with another sheet and press lightly. Repeat the process. Sprinkle the surface with powdered sugar and optionally decorate with fruit.

Tips and variations

  • You can add a few drops of rum to the cream for a more pronounced flavor.
