If you love traditional Moravian kolaches, but don’t have time to wait for the dough to rise, try this quick and healthier version made with quark dough. They are fluffy, moist and full of quark and poppy seeds. An ideal choice with afternoon coffee or as a sweet breakfast.

Preparation procedure

  • Preparation of the poppy seed filling In a saucepan, mix the poppy seeds with the sugar, lemon zest and milk. Heat over low heat and stir until the mixture comes together. Let cool.
  • Preparation of the quark filling Beat the butter with the sugar until fluffy. Add the eggs, quark, corn starch and lemon juice. Mix everything well and refrigerate to set.
  • Preparation of the dough Combine the flour with salt and baking powder. Add the quark, sugar, vanilla sugar, milk and oil. Work into a smooth and elastic dough. Divide it into 6 equal parts and shape them into small buns. Roll each bun into a 10 cm circle with a 1 cm high edge.
  • Filling the kolaches Place the dough circles on a baking sheet lined with parchment paper. Spread the quark filling in the center of each kolach, leaving the edge free. Transfer the poppy seed filling to a piping bag and create a thin strip between the quark and the edge of the dough. Add strawberry jam to the center of each kolach.
  • Baking Stir the apricot jam and brush it onto the edges of the kolaches. Sprinkle with sliced almonds and bake in a preheated oven at 180 °C for about 25 minutes, until golden.
