Preparation procedure
- Preparing the starter: Make a starter from lukewarm milk, a little sugar and the yeast. Let it sit for a while until it starts to foam.
- Preparing the dough: Sift the flour into a bowl. In another bowl, mix the mayonnaise with the egg yolks, the sugar and the oil. Add the mixture to the flour, add salt and mix everything well until a smooth dough forms. Let the dough rise in a warm place until it doubles in size.
- Preparing the cream: Whip the cream with sugar, or use mascarpone with sugar and 1 teaspoon of lemon zest. Alternatively, you can use soft quark, sour cream or other ingredients you have in the fridge.
- Shaping the doughnuts: Take spoonfuls from the risen dough and shape them into balls. Let the balls rise for another 15 minutes.
- Frying: Heat the oil for frying. Fry the doughnuts until golden, turning them so they cook evenly.
- Filling with cream: Cut the cooled doughnuts in half. Fill them with cream (preferably using a piping bag).
