Mom’s sour cream poppy-seed roulade is a quick and easy no-yeast dessert that offers a tender texture and classic poppy-seed flavor — ideal with coffee or as a sweet breakfast. Preparation procedure

  • Put the all-purpose flour, softened butter, sour cream, baking soda and part of the beaten egg into a bowl (reserve a smaller portion for brushing). Work into a smooth, cohesive dough. If it's too stiff, add a little sour cream; if sticky, lightly dust with flour.
  • Roll the dough out on a floured surface into a rectangle about 3–4 mm thick.
  • Evenly sprinkle the surface of the dough with ground poppy seeds mixed with sugar and cinnamon. Spread the filling evenly so the roulade rolls up well.
  • Carefully roll the dough into a roulade. Transfer it to a baking sheet lined with parchment paper seam-side down. Brush the surface with the remaining beaten egg.
  • Preheat the oven to 180 °C. Bake the roulade for about 25 minutes, until the surface is nicely golden.
