Mole tray cake made from mug batter with bananas and chocolate whipped cream. A simple, moist dessert for a large baking tray. Step-by-step recipe, tips and timings.

Moist, not overly sweet and with a generous layer of bananas – this „mole sheet cake“ is a family favorite that even a beginner can bake. The mug batter is ready in the bowl in a few minutes, the cream is smooth and, thanks to the grated chocolate, wonderfully chocolatey. It tastes best after a short chill.

Preparation procedure

  • Base – Mix all ingredients for the batter until smooth. Spread the batter on a 38 × 25 cm tray lined with baking paper. Bake at 180 °C for about 20 minutes. Let cool completely.
  • Scooping – Carefully scoop out the cooled sheet to a depth of about 0.5 cm, leaving edges about 1 cm wide around the perimeter. Keep the crumbs for sprinkling.
  • Bananas – Arrange lengthwise halved bananas over the scooped surface.
  • Cream – Cook the pudding from milk, sugar and pudding powder. Let cool and briefly whisk. Stir in the cream, add the stabilizer and whip into a firm cream. Gently fold roughly grated chocolate into the finished cream.
  • Assembly – Spread the cream over the bananas in the shape of „molehills“ and sprinkle with crumbs from the scooped base. Let set in the fridge for at least 1 hour (it's even moister after chilling overnight).

Total preparation time: approx. 1 hr 30 min (prep 25 min, baking 20 min, cooling and assembly 45 min)

Tips

  • Occasionally stir the pudding while cooling to prevent a skin from forming.

  • You can sprinkle the bananas with lemon juice to slow browning.

  • Briefly rub the crumbs between your palms before sprinkling – they will become finer and adhere nicely.

Conclusion

The mole tray cake is a dessert that relies on simplicity and impact – a moist cocoa base, juicy bananas and a fluffy chocolate cream. It slices well, holds its shape nicely and is ideal for family celebrations and weekend treats. In our house, it always disappears from the tray first.
