  • Preparation of the egg white mixture: Put the egg whites and sugar into a stainless steel or glass bowl. Place it over a pot of gently simmering water (bain-marie) and stir continuously until the sugar is completely dissolved (takes about 5–7 minutes).
  • Whipping: Remove the bowl from the heat and whip the mixture into stiff, glossy peaks (about 8–10 minutes at highest speed). Add the lemon juice and beat briefly again. Finally, gently fold in the starch.
  • Shaping and drying: Preheat the oven to 110 °C. On a baking sheet lined with parchment paper, form small nests using a spoon or a piping bag – the center should be slightly hollowed so they can be filled later.
  • Drying: Place the sheet in the oven and immediately reduce the temperature to 90 °C. Dry for about 90 minutes, until the shells are dry and lift away from the paper easily. Let them cool in the oven with the door slightly ajar.
