This million-dollar quark cake is exactly the kind of recipe you’ll save and come back to again and again. It’s incredibly simple, quick to prepare and the result tastes like a dessert from a good patisserie. No rolling out dough, no complicated procedures – just spread the dough on a tray, layer the quark cream, add fruit and bake.

Preparation procedure

  • In a bowl mix the plain flour, baking powder, sugar and a pinch of salt. Add the melted butter and the egg. Mix briefly until a soft, smooth dough forms.
  • Line a baking sheet approximately 25 × 35 cm with parchment paper or grease it with butter. Spread the dough evenly directly on the sheet using a spatula or the back of a spoon.
  • Put the quark, powdered sugar, vanilla, lemon juice and eggs into a bowl. Whisk briefly to form a smooth cream. Whip the cream separately to soft peaks and gently fold it into the quark mixture.
  • Spread the quark cream evenly over the prepared dough. Arrange the fruit on top to taste.
  • Preheat the oven to 180 °C (fan 160 °C). Bake the cake for about 30 minutes, until the cream sets and the surface takes on a light golden hue.
  • After baking, let the cake cool on the sheet. Then cut it into slices or squares. The chilled cake tastes even better.

Tips and variations

You can add grated lemon zest to the quark cream for a fresher flavor. Instead of fresh fruit you can also use canned fruit, well drained. For a more festive version you can lightly sprinkle the fruit with sugar or almonds before baking.
