Preparation procedure

  • Dough preparation: Whisk the egg whites to stiff peaks. Beat the egg yolks with the sugar until foamy, add the oil, lukewarm water and the flour mixed with baking powder and baking soda. Finally, gently fold in the beaten egg whites.
  • Dividing the batter: Divide the batter into two halves. Stir cocoa into one and leave the other light. Bake both batters separately in a greased and floured Bundt pan.
  • Baking: Bake in a preheated oven at 180 °C for about 40 minutes, until the cake turns golden. After baking, let the layers cool completely and cut them into slices about 1 cm thick.
  • Cream: Mix the pudding powder in a little cold milk, bring the remainder to a boil. Stir in the mixed pudding and cook a thick cream, cover it with cling film and let it cool. Beat the butter with the powdered sugar and gradually add it to the cooled pudding. Flavor with rum.
  • Assembling the cake: On each slice (alternating light and cocoa) spread cream and press another slice on top. Continue until all ingredients are used up. This yields a long "meter" cake.
  • Glaze: Melt the chocolate with the oil in a double boiler and mix until smooth. Pour the glaze over the cake and let it set in the refrigerator overnight.
  • Serving: The next day, cut the cake diagonally, which creates the characteristic striped pattern.
