Preparation procedure

  • Preparation of the cream: In a saucepan mix the milk, sugar and pudding powder (or cornstarch). Bring to a boil and cook, stirring constantly, until thickened. Let the cream cool.
  • Preparation of the dough: Beat the egg yolks with the sugar until fluffy. Gradually add the oil and water until a smooth mixture forms. In a bowl mix the flour with the baking soda and fold it into the liquid mixture. Beat the egg whites with a pinch of salt until stiff peaks form and gently fold them into the batter. Divide the batter into two parts. Add the cocoa to one part and mix well; leave the other without cocoa.
  • Assembling the cake: Layer the batter alternately into a pan lined with parchment paper. Spread the cooled pudding evenly over the batter in the pan. Bake in a preheated oven at 180°C for about 30 minutes. After baking let the cake cool on a wire rack.
  • Preparation of the decoration: Whip the cream with the vanilla sugar until stiff. Then mix it with the crème fraîche (or sour cream). Spread this mixture over the cooled cake.
  • Chilling and serving: Let the cake chill in the refrigerator for at least one hour before serving.
