Preparation procedure

  • Preparation of the choux pastry: In a saucepan heat the milk, water, sugar, salt and butter. Once the mixture begins to boil, stir in the all-purpose flour and mix vigorously until a smooth dough forms that does not stick to the sides of the pot. Transfer the dough to a bowl and gradually work the eggs into it – one at a time – until the mixture is beautifully smooth. Spread the dough on a baking sheet lined with parchment paper and bake for 10 minutes at 230 °C, then reduce the temperature to 200 °C and bake for another 10 minutes.
  • Vanilla cream: Mix the pudding powder into 150 ml of milk. Put the remaining milk into a saucepan together with the sugar, egg yolks and the seeds from the vanilla pod. Once the mixture begins to boil, add the mixed pudding and cook until a thick cream forms. Then cover the surface with cling film to prevent a skin from forming, and let it cool completely.
  • Combining the cream: Whip the butter until fluffy and gradually add the cooled pudding. Finally, fold in the chopped strawberries.
  • Dessert assembly: Slice the cooled dough lengthwise into two halves. Place the bottom half back into the pan, pile the entire strawberry-vanilla cream on it and top with the second half of the dough. Let the slices chill in the refrigerator for at least an hour.
  • Serving: Before serving, cut into portions and, to taste, garnish with powdered sugar, fresh strawberries or mint leaves.
