500 ml milk
1 teaspoon vanilla sugar
100 g butter

For the glaze:

30 ml milk
30 g butter
60 g dark chocolate

For finishing:

100 ml milk (for brushing the base)
Parisian whipped cream or grated chocolate (optional)

Preparation procedure

Preparation of the base: Whisk the egg whites with a pinch of salt into stiff peaks. Gradually beat in the sugar. Gently fold in the flour mixed with the baking powder and the grated chocolate. Spread the batter on baking paper and bake in an oven preheated to 180 °C for about 8 minutes. Let cool completely.
Preparation of the cream: Mix the egg yolks, sugar and starch with part of the milk. Heat the remaining milk and, stirring constantly, pour in the egg-yolk mixture. Cook until thickened. After cooling, stir in the butter and beat into a smooth cream.
Chocolate glaze: In a saucepan heat the milk with the butter, add the chocolate and stir until melted. Let cool slightly.
