Preparation procedure

  • Preparing the batter: In a bowl, mix the kefir, melted butter, eggs, sugar, and salt. In another bowl, mix two cups of flour with the baking soda and add to the kefir mixture. Gradually add the third cup of flour and work into a smooth dough. Cover it with a cloth and let it rest in a warm place for about 30 minutes.
  • Preparing the filling: Mix the grated cheese with the egg. The filling is ready to use.
  • Shaping the pancakes: Divide the dough into 9 equal pieces. On a floured surface, roll each piece into a circle. Place a spoonful of the cheese filling in the center of each circle, press the edges of the dough with your fingers so the filling doesn't fall out. Then gently roll them out again.
  • Frying: Heat the oil in a pan and fry the pancakes on both sides until golden. Each side should be nicely crispy and the filling inside melted.

Serving tip
