Homemade jam doughnuts are a traditional sweet pastry, prepared for festive occasions or simply for pleasure. The doughnuts made from this recipe are beautifully fluffy, moist and remain soft even the next day. Thanks to the right ratio of ingredients and the addition of rum to the dough, they do not soak up oil and have a delicate, balanced flavor. They are suitable for filling with jam, plum jam or chocolate spread and are among the sure things that always turn out well.

Preparation procedure

  • Crumble the yeast into 150 ml lukewarm milk, add a teaspoon of sugar and a teaspoon of flour. Stir and let the starter rise for about 15 minutes.
  • Sift the plain flour into a bowl, add salt, egg yolks, softened butter, granulated sugar, the remaining lukewarm milk, rum and the prepared starter.
  • Work into a smooth and supple dough. Knead for at least 5–8 minutes, by hand or in a mixer, until the dough pulls away from the sides of the bowl.
  • Lightly dust the dough with flour, cover with a cloth and let rise in a warm place for about 50 minutes, until it doubles in size.
  • Roll the risen dough out to a thickness of about 1 cm. Use a glass to cut out circles about 5 cm in diameter. Make a small indentation in the center of each with your fingers and let them proof for another 15 minutes.
  • Heat the oil in a deep pot. Place the doughnuts into the oil with the indentation down and fry until golden on both sides. The oil must be hot, but must not smoke.
  • Let the fried doughnuts drain on paper towels, then sprinkle them with powdered sugar and fill with jam or plum jam.
