Preparation procedure

  • Preparing the dough: Mix all the ingredients for the dough and work into a smooth dough. Divide the dough into two halves and let it rest at room temperature.
  • Preparing the cream: Beat the egg whites with 80 g of sugar into stiff peaks. Mix the quark with the remaining sugar, lemon juice and starch. Gently fold the prepared meringue into the quark mixture.
  • Assembling the cake: Roll out the first half of the dough and spread it on a greased and floured baking tray. Spread the prepared quark cream over the dough and smooth it. Cover with the second half of the dough.
  • Baking: Place the cake in a preheated oven and bake for 20 minutes at 200 °C. Then reduce the temperature to 150 °C and bake for another 5 minutes.
