Turkish pide is a popular flatbread with a soft crumb and a crispy crust, perfect with dips, kebab or as a side to goulash. This recipe will show you how to create authentic pide from simple ingredients right in your home kitchen.

Preparation procedure

  • Activating the yeast Pour 100 ml lukewarm water into a small bowl, add a pinch of sugar (optional) and crumble the yeast. Let stand for 5–10 minutes until foamy.
  • Preparing the dough In a larger bowl, mix the flour with the salt. Add the activated yeast, the remaining lukewarm water and the olive oil. Knead by hand or with a mixer for about 8–10 minutes, until a smooth, slightly sticky dough forms.
  • First rise Transfer the dough to a lightly oiled bowl, brush the surface with oil and cover with cling film or a clean towel. Let rise in a warm place for 60 minutes, until the volume has doubled.
  • Shaping the pides Divide the risen dough into 2 equal pieces (for two larger pides) or into 4 pieces (for smaller rounds). On a lightly floured surface, stretch each piece into an oval or rectangular sheet about 5–7 mm thick. Flatten and press the edges slightly, and use your fingers to create indentations in the center that will better hold fillings or oil.
  • Final proofing and preparation for baking Line a baking tray with parchment paper and transfer the sheets onto it. Let them proof for another 15 minutes. Brush the tops of the pides with the beaten egg and sprinkle with sesame.
  • Baking Preheat the oven to 230 °C (convection 210 °C). Place the tray in the middle of the oven and bake for 12–15 minutes, until the edges turn golden and the crumb remains soft and fluffy.
