Preparation procedure

  • Dough preparation: In a large bowl mix all ingredients for the dough – all-purpose flour, egg yolks, softened butter, powdered sugar, baking powder and sour cream. Work into a smooth dough.
  • Divide the dough into two equally sized parts and let it rest briefly at room temperature.
  • Cream preparation: In a clean bowl whip the egg whites with lemon juice to stiff peaks.
  • In another bowl mix the quark with granulated sugar and cornstarch, then gently fold the prepared whipped egg whites into this mixture.
  • Assembling the cake: Roll out one half of the dough and spread it on a greased and floured baking sheet. Evenly spread the quark cream over the dough and smooth the surface. Cover with the second rolled-out half of the dough.
  • Baking: Bake in a preheated oven at 200 °C for approximately 20 minutes, then reduce the temperature to 150 °C and bake for another 5 minutes.
  • Let the cake cool slightly and only then slice it.
