Preparation procedure

  • Preparing the dough: In a bowl mix the flour, softened Hera, mascarpone (or processed cheese) and vanilla sugar. Work into a smooth, non-sticky dough with your hands. Wrap it in cling film and let it rest in the fridge for a while (approx. 20 minutes).
  • Shaping the kolaches: Cut pieces of dough of about 15 g and shape them into balls. Place them on a baking sheet lined with parchment paper.
  • Filling: Make a dent in the center of each ball, for example with a bottle stopper or your finger. Fill to taste with quark, poppy seed filling or plum jam.
  • Baking: Bake in an oven preheated to 180 °C for about 20 minutes, until the kolaches are lightly golden.
  • Finishing: While still hot, roll the kolaches in powdered sugar mixed with vanilla sugar and let them cool on a rack.
