Preparation procedure

  • Preparing the dough: Grate the frozen butter on a coarse grater and mix with the flour. Add the egg, salt, vinegar and cream. Quickly work into a smooth dough, wrap it in cling film and let it rest in the refrigerator for at least 2 hours.
  • Shaping the cream rolls: Roll out the rested dough into a sheet about 3 mm thick and cut into long strips. Wrap these around metal cream roll tubes and brush with beaten egg.
  • Baking: Place the cream rolls on a baking sheet lined with parchment paper and bake in a preheated oven at 180 °C until golden (approx. 15–20 minutes). After baking, let them cool and carefully remove them from the molds.
  • Egg white cream: Whisk the egg whites, granulated sugar, vanilla sugar and a pinch of salt over a water bath until a glossy, stiff meringue forms. Then continue whisking off the heat for a while and, after cooling, fill the cream into a piping bag.
  • Filling: Fill the cooled cream rolls with the cream from both ends. You can also lightly dust them with powdered sugar.
