Preparation procedure

  • Preparation of the choux pastry Bring the water, butter and a pinch of salt to a boil. Add the flour and, stirring constantly, cook the dough until it begins to pull away from the wooden spoon and the sides of the pot. Let it cool for a moment, then beat in the eggs one at a time. Put the finished dough into a piping bag and pipe cream puffs onto a baking sheet lined with baking paper. Bake for 40 minutes at 170 °C – do not open the oven during baking.
  • Preparation of the egg‑yolk cream Make a thick custard from the pudding powder and milk. Let it cool and then beat it. Whip the cream until stiff and gently fold it into the pudding base. Use this cream to fill the bottom halves of the cream puffs.
  • Preparation of the caramel cream Put the sugar into a saucepan and let it slowly melt into a light caramel. In another saucepan warm the cream (1 tub) and carefully pour it into the caramel (watch for foaming). Let the mixture cook until smooth. Chill it, preferably until the next day. Before use, whip it with the remaining tub of cream to a creamy consistency.
  • Preparation of the glaze Caramelize the sugar and, stirring constantly, pour the cream into it. Stir until smooth. Adjust the thickness of the glaze as needed: by reducing it or by adding cream.
  • Assembling the cream puffs Slice open the bottom halves, fill with the egg‑yolk cream and then with the caramel cream. Place the tops back on and pour over the caramel glaze. Let set and serve.
