Preparation procedure

  • Choux pastry Pour the water into a pot, add the Hera and a pinch of salt. Bring to a boil so the fat completely melts. Add the flour and stir vigorously until the dough separates from the sides and forms a smooth mass. Let cool completely. Gradually beat the eggs into the cold dough – one at a time – until a smooth, semi-soft dough forms.
  • Shaping and baking Transfer the prepared dough into a piping bag fitted with a decorative tip. On a baking sheet lined with parchment paper, form the wreaths. Bake in a preheated oven at 200 °C for about 30 minutes. Do not open the oven during baking, otherwise the wreaths will collapse. Let cool.
  • Cream filling Cook a classic vanilla pudding in milk and let it cool. Meanwhile, whip the butter with powdered sugar until fluffy and gradually add the cooled pudding. You will get a smooth cream.
  • Glaze Gently heat the Omega, milk and rum over low heat. Remove from heat and stir in the powdered sugar. Stir until smooth.
  • Assembling the wreaths Slice the wreaths, fill with the prepared cream and close. Brush the top with the glaze or gently pour it over with a spoon.
