Preparation procedure

  • Preparing the sponge Pour 150 g of flour into a bowl, add a tablespoon of sugar, crumble the yeast and pour in 150 ml of lukewarm milk. Cover with a cloth, wrap in a blanket and let rise for 15–30 minutes.
  • Preparing the dough To the risen sponge add the remaining flour, sugar, vanilla sugar, grated lemon zest, egg, the remaining milk and melted butter (everything should be at room temperature). Beat with a hand mixer until a smooth dough forms. Sprinkle the surface with flour, cover and let rise for 1 hour.
  • Shaping the buns Divide the dough into two parts, roll out to a sheet about 1 cm high and cut into squares. Put a teaspoon of plum jam or jam mixed with nuts and a little starch into the middle. Seal the dough thoroughly on all sides.
  • Baking Place the buns closed side down on a butter-greased baking sheet. Place them close together and brush each with melted butter. Bake in a preheated oven at 160–180 °C until golden (approx. 25–30 minutes). Brush the hot buns with butter once more, let cool and dust with powdered sugar before serving.
