Preparation procedure

  • Do not pound the pork neck slices. Salt and pepper them on both sides. Heat the lard in a pan and sear the meat quickly on each side for about 2 minutes to seal it. Transfer the seared meat to the baking dish.
  • Peel the potatoes and slice them into rounds about 0.5 cm thick. It is important to dry the potatoes with a paper towel so they steam in the baking dish rather than boil. Slice the onion into half-moons and the bacon into slices.
  • On each slice of meat, spread a layer of onion, place the smoked bacon on top, and cover everything with a layer of potato rounds. Lightly salt the potatoes and sprinkle with crushed caraway.
  • Pour the whipping cream over the entire contents of the baking dish. Cover the dish with a lid or foil and place in an oven preheated to 200 °C for 40 minutes. Then remove the lid, reduce the temperature to 170 °C and bake for another 20 minutes, until the potatoes are tender and the surface is lightly golden.
