Preparation procedure

  • Put the quark into a bowl and lightly mash it with a fork. Add the eggs, semolina, breadcrumbs, coarse flour, baking powder, a pinch of salt and softened butter. Work into a soft, pliable dough.
  • Form balls from the dough about the size of a walnut. Lightly coat each ball in coarse flour (they won’t stick and won’t clump together in the water).
  • Bring plenty of water to a boil in a pot, salt it (1 teaspoon of salt is enough). Put the dumplings into the boiling water and cook for about 4–5 minutes. Once they float, let them cook a little longer and then drain.
  • Toast the breadcrumbs in a dry pan until golden. Coat the cooked dumplings in them, pour over melted butter and sprinkle with powdered sugar.
