The “Clouds” pastry is a breathtaking combination of choux pastry, velvety cream and fluffy whipped cream. This dessert not only stuns visually, but will completely win you over with its taste. A great choice with coffee or as the centerpiece of a festive table. Baking sheet approx. 25 × 37 cm

Preparation procedure

  • Choux pastry Bring the water with the Hera to a boil. Stir in the plain flour and, stirring constantly, cook until the dough no longer sticks to the sides of the pot. Let cool. Gradually beat the eggs into the lukewarm dough. Divide the dough between two baking sheets lined with parchment paper and bake at 200 °C for about 23 minutes. Let cool completely.
  • Cream Mix the milk, vanilla sugar, plain flour and powdered sugar in a saucepan and cook until thickened. After cooling, add softened butter and beat into a smooth cream. You can flavor it with rum.
  • Assembly Spread all the cream over one sheet of pastry and pour over the melted chocolate. Let set. Then layer on the whipped cream and cover with the second sheet of pastry cut into squares. Pour chocolate over again and let firm up in the refrigerator, ideally overnight.
