  • Preparing the dough Sift the flour into a large bowl and add the grated lemon zest, a pinch of salt and the sugar. Pour in the starter, milk, egg and melted butter. Mix until the dough becomes compact. The dough will be thin at first but will gradually thicken. Let the dough rise for about 90 minutes, until it has doubled in volume.
  • Shaping the buns On a floured work surface, gently mix the risen dough and lightly dust with flour. Divide the dough in half and let one part rise a bit more. Roll out the other part to a thickness of 0.5 cm and cut into squares about 7x7 cm. Put filling (jam, quark or Nutella) on each square and roll into a ball or small roll shape.
  • Baking Pour a little oil onto a baking sheet or into a baking dish. Turn each bun in the oil so it is oiled on every side, and place them close together. Let them rise a little longer.
