This cake combines a fluffy coconut base, a fresh cherry layer, a delicate vanilla cream and a chocolate glaze. The result is a light, refreshing dessert that goes well with coffee, for celebrations and as a festive weekend treat.

Preparation procedure

  • Whip the egg whites until stiff. Gradually beat in the sugar. On the lowest speed briefly fold in the flour and grated coconut. Spread the batter evenly on a baking sheet lined with parchment paper. Bake in an oven preheated to 180 °C for approximately 15–20 minutes. Let cool.
  • Drain the cherries and reserve the juice. Stir the pudding powder into part of the juice, bring the remaining juice to a boil, add the sugar and the pudding. Cook briefly, stir in the cherries and immediately spread over the cooled base. Let set slightly.
  • Use the milk, sugar and pudding powder to cook a thick pudding and let it cool completely. Whip the cream until stiff and gently fold it into the pudding. Spread the cream evenly over the cherry layer.
  • Melt the chocolate with the butter in a double boiler or over low heat. Spread the finished glaze over the top of the cake.
  • Chill the cake in the refrigerator for at least 2 hours. Then cut into slices and serve.
