Yeasted strudels are among traditional desserts that never disappoint. This recipe offers four great fillings so everyone can find their favorite. Make fragrant and delicious strudels just like grandma’s!

    Preparation procedure

    • Dough preparation: Mix lukewarm milk, egg yolks, powdered sugar and a pinch of salt. Add the yeast and let the mixture stand. Mix the flour with the butter, add the prepared starter and knead a smooth dough. Divide it into 4 rolls and let rise for 30 minutes.
    • Preparing the fillings: a) For the walnut/poppy seed filling, boil the milk with the sugar, vanilla sugar, lemon zest and honey. Add ground walnuts or poppy seeds, raisins and cinnamon. Let cool. b) For the chestnut filling, mix the chestnut purée, orange zest, vanilla sugar, honey, rum and cream. c) For the chocolate filling, spread the dough with jam, sprinkle with the walnut filling and grated chocolate.
    • Filling and baking: Roll each dough roll into a thin sheet. Spread it evenly with the chosen filling and roll up tightly. Brush with egg yolk and let rise for 30 minutes. Then brush with egg white and let rest another 30 minutes. Use a fork to create a lattice on the surface and bake in a preheated oven at 170 °C for 20–25 minutes.
