Preparation procedure

  • Preparing the baking sheet: Prepare a baking sheet measuring 32 x 20 cm. Grease the bottom with butter and sprinkle with breadcrumbs. Preheat the oven to 170 °C.
  • Preparing the batter: In a bowl, beat the sugar with the butter and egg yolks until frothy. Add the ground walnuts, grated chocolate, vanilla sugar and flour. Finally, gently fold in the beaten egg whites.
  • Baking: Spread the batter evenly on the prepared pan and bake for approximately 30 minutes, or until the cake is cooked through and golden.
  • Preparing the glaze: Melt the dark chocolate in a double boiler, add 100 g of butter, the warm water and powdered sugar. Once the chocolate has melted, add the egg yolk and 80 g of butter. Whisk over steam until you obtain a smooth mixture.
  • Finishing: Pour the glaze over the slightly cooled cake and decorate with whole nuts to taste. Let the cake rest for at least 2 hours so the glaze can set and the cake can be cut well.
