Preparation procedure

  • Preparing the starter: Crumble the yeast into lukewarm milk and add the sugar. Leave for 10 minutes to allow the starter to foam.
  • Preparing the dough: Sieve the flour into a bowl and add the butter cut into cubes. Work the butter into the flour with your hands. Add the starter, the egg and a pinch of salt. Knead a smooth dough. Divide the dough into three equal parts, wrap in plastic wrap and let rest in the refrigerator for 30 minutes.
  • Preparing the filling: Bring the milk to a boil in a pot, add the sugar and, stirring constantly, pour in the ground poppy seeds. Add the vanilla sugar, breadcrumbs and lemon zest. Cook, stirring constantly, for 2–3 minutes, then remove from the heat and let cool.
  • Shaping the rolls: Roll each piece of dough into a rectangle about 0,5 cm thick. Divide the filling into three parts and spread it evenly over the dough, leaving a 1 cm free edge. Roll the dough tightly into a roll and seal the edges carefully so the filling doesn't leak.
  • Baking: Transfer the rolls to a baking sheet greased with oil and let rest for 20 minutes. Brush them with beaten egg yolk and let rise for another 15 minutes. Then brush them with beaten egg white and preheat the oven to 180 °C. Bake for approximately 30 minutes until golden.
  • Serving: Let the baked rolls cool completely, then slice and serve.
