Preparation procedure

  • Preparation of the dough: in a bowl mix plain flour, baking powder, salt, sugar and vanilla sugar. Add the soft butter, curd, egg and lemon zest. Work into a smooth dough and let it rest in the fridge for at least an hour.
  • Curd filling: mix the curd with sugar, eggs, vanilla sugar, starch, sour cream and lemon zest. Mix everything well.
  • Shaping the pastries: roll out the dough on a floured surface to a thickness of approx. 3 mm and cut out circles with a glass or cutter.
  • Filling: place a tablespoon of the curd filling and a little plum butter or jam on each circle.
  • Closing: brush the edges with beaten egg, fold into a half-moon and press firmly so the filling does not leak.
  • Baking: place the pastries on a baking sheet lined with baking paper, brush with egg and bake in an oven preheated to 180 °C for about 15–20 minutes, until golden.
