Preparation procedure

  • Preparing the dough: Mix the milk with the sugar and dried yeast, add the melted butter, sifted flour, vanilla sugar and salt. Mix into a smooth, elastic dough. Cover it with a cloth and let it rise in a warm place for about 90 minutes.
  • Shaping the buns: After the dough has risen, knead it again on a floured work surface and divide it into nine equal parts. Shape each part into a small ball, place them on a floured tray, cover with a cloth and let rise for about 15 minutes more.
  • Preparing the filling: Meanwhile prepare the filling: Mix the cottage cheese, sugar and egg white until a smooth mixture forms.
  • Filling and shaping the buns: Roll the risen balls into squares measuring 10x10 cm. Fill each square with the cottage cheese filling and fold the corners together so the buns don't open during baking. Shape into little pouches.
  • Before baking: Whisk the egg yolk with 1 teaspoon of water and brush the buns with this mixture. Then place them on a baking sheet lined with parchment paper and let them rise for another 20 minutes.
  • Baking: Bake in a preheated oven at 200°C for about 20–25 minutes, until the buns are nicely golden. After baking, dust them with powdered sugar.
