If you’re looking for a versatile recipe for a great strudel, you’re in the right place! From one dough you’ll create four types of fillings that will satisfy every family member. The strudel is moist, tasty and easy to make.

Preparation procedure

  • Dough preparation: Put the sugar and yeast into a bowl, pour in 200 ml warm water and mix. Add 70 ml oil, the remaining 400 ml warm water, the flour and the salt. Work the dough. Gradually incorporate 20 ml oil, then another 20 ml oil and knead into an elastic dough. Cover the dough and let it rest for 30 minutes. Divide the dough into 4 loaves, brush each loaf with oil and cover with plastic wrap. Let rest for another 30 minutes.
  • Filling preparation: Poppy seed: Mix the poppy seeds, sugar, plum jam and semolina. Add hot milk and stir. Walnut: Mix the walnuts, sugar and plum jam, pour in hot milk and stir. Apple: Grate the apples, mix with sugar, cinnamon, vanilla sugar and semolina. Cherry: Mix the cherries with sugar, blend/puree and add semolina. If the mixture is thick, add a little hot milk.
  • Filling and baking: Roll each dough loaf into a thin rectangle (40 x 100 cm). Spread one type of filling, leave one edge free (10 cm) and carefully roll up. Transfer to a baking sheet lined with parchment paper. Separate each strudel with parchment paper so they do not touch. Brush with the beaten egg mixed with milk and prick with a skewer. Bake in a preheated oven at 200 °C for 55–60 minutes.
  • Finishing: After cooling, sprinkle the strudels with powdered sugar.
