A sponge cake can sometimes be tricky, but this recipe guarantees it will always turn out. Thanks to the simple method and a few tricks, your sponge will be perfectly airy and will never collapse! Try this proven recipe and you’ll never have to worry that your sponge will let you down.

Ingredients

6 eggs
180 g sugar
3 tablespoons sunflower oil
150 g plain flour
1.5 teaspoons baking powder
a pinch of salt

Preparation procedure

First, preheat the oven to 180 °C. Take a baking tin of any shape and size, line the bottom with baking paper, which you lightly grease with oil so the sponge cake can be easily removed after baking. Do not grease the sides of the tin, because the sponge bakes better on hot metal and won't pull away.
Beat the eggs and sugar with a mixer for about 5–7 minutes, until the mixture turns pale and grows to three times its volume.
Gradually add the oil to the egg mixture and mix quickly. Sift the flour, salt and baking powder and add them to the mixture. Mix everything quickly with the mixer.
Pour the batter into the prepared tin and bake in the preheated oven at 180°C for about 15–20 minutes, until golden. Do not open the oven during baking, so the sponge won't collapse.
After baking, let the sponge cool in the tin, then turn it out onto a wire rack and use as needed.
