Dumplings are one of the pillars of Czech cuisine and few things evoke as strong a feeling of home as a plate of freshly prepared dumplings. Preparation procedure

  • Pour the kefir into a larger bowl and stir in the baking soda. Let stand for 5 minutes – the mixture will begin to lightly foam, which is key for the dough's fluffiness. Add the egg, salt and optionally the sugar. Mix well. Gradually add the sifted flour and work into a soft, elastic dough. It should not stick, but must remain pliable. Cover with a cloth and let rest for 20–30 minutes.
  • Choose the filling to taste. Mix the quark with sugar and vanilla, season the mashed potatoes with salt, pepper and onion, lightly sprinkle the cherries with sugar.
  • Roll the dough into a sheet about 3 mm thick. Cut circles with a glass, place the filling in the center and carefully seal the edges. The seam must be well sealed so the filling doesn't leak during cooking.
  • Lightly oil the steam insert or cloth. Arrange the dumplings with spaces between them, because they will expand significantly during cooking. Steam for 8–10 minutes. The dumplings will be beautifully puffed, soft and light.
  • Serve immediately after finishing cooking. They taste great with butter, sour cream, quark, honey or homemade jam. Savory versions are complemented by onion or a sauce.
